Pro-Pineapple and Mint

I know not all of the country feels this way just yet, but in Southern Arizona, Spring is here! The sun is shining, people are wearing shorts and flip flops and I can almost taste the summer fruits that will fill my local farmer’s market in just a few weeks.

I figure it is time for longer workouts and tastier post-workout drinks to make it seem worthwhile.

I love fresh pineapple. But just wait, this blended beverage gets even better.

We get some creaminess from this Kefir, which is a fermented milk drink that’s similar to yogurt. It’s a good probiotic to get things moving!

Mint goes wonderfully with the pineapple.

The ice will help make this frothy and simply slurp-able. That’s a word, right?

RECIPE:

  • 1/2 fresh pineapple, cut into chunks
  • 3/4 cup Kefir, or do a combination of yogurt and water
  • Handful of fresh mint, stems removed
  • 1 cup ice

Add all your ingredients into a blender and blend. Feel free to add more ice or liquid to reach a desired consistency.
