Vegan Green Date Shake

P1030393I’ve told you before that I love my green smoothies. Each one I make is just a bit different from the other, but this one is one I’ll be making over and over again. It has spinach, yes.

But dates and homemade almond butter give this a sweetness that makes it feel like a shake, not a smoothie.

I love cooking with dates. They’re a great natural sweetener for baking. Soak them in boiling hot water to easily remove the pits and soften them for smoother blending.

The pit will slide right out.

Start with about a half a cup each of coconut water and almond milk.

Then add your spinach, frozen banana, greek yogurt, almond butter, dates and some ice.

Blend until smooth.

Recipe:

  • 3 dates, soaked in boiling water and pits removed. 
  • 1/2 cup coconut water
  • 1/2 cup almond or coconut milk
  • 2 cups spinach
  • 2 Tablespoons Greek yogurt
  • 1 frozen banana
  • 1 Tablespoon (heaping) almond butter, or any nut butter
  • 1 small handful of ice cubes

Blend until smooth and drink over ice with a straw to jazz it up!
