I made these yummy granola bars to pack as my mid-morning snack, or sometimes to have as an after dinner treat! They’re so easy to make and you can modify them in many ways.
They’re inspired by Green Plate Rule’s Gluten-Free Granola Bars. I used raw cashews, raw sunflower seeds, chia seeds and flax seed plus organic brown rice puffed cereal and gluten free raw organic oats in my dry mixture. The wet mixture is brown rice syrup and an almond-peanut butter blend.
Just throw them in a glass measuring cup and microwave it so it’s easier to mix those ingredients. I then added vanilla extract and ground cinnamon for added oomph! Add the liquid to the dry and mix well. I sprayed a baking sheet with non-stick spray and spread the mixture out before cooling in the fridge for an hour or so. Once they were set, I sliced them and individually wrapped in foil. I look forward to having one each day!
If I were to make again, I’d try adding dried fruit or even a sweet chip like dark chocolate or butterscotch! The possibilities are endless.
